自製珍珠奶茶珍珠

Making tapioca pearls at home is easier than you might think. With just tapioca starch and a hot liquid, you can make fresh, chewy pearls for your own bubble tea.

在家做珍珠其實比想像中簡單。只需要樹薯粉和滾燙的液體,就可以做出新鮮、有嚼勁的珍珠,搭配自己喜歡的珍珠奶茶。

Ingredients
食材

The basic amount is 15 g of tapioca starch per person.

基本份量是每人 15 克樹薯粉。

  • 1 serving: 15 g tapioca starch + 15 ml liquid
    1 人份:15 克樹薯粉 + 15 ml 液體
  • 2 servings: 30 g tapioca starch + 30 ml liquid
    2 人份:30 克樹薯粉 + 30 ml 液體
  • 4 servings: 60 g tapioca starch + 60 ml liquid
    4 人份:60 克樹薯粉 + 60 ml 液體

Tapioca starch : Liquid = 1 : 1
樹薯粉:液體 = 1:1

For the liquid, you can use water, brown sugar water, or fruit juice.

液體可以使用水、黑糖水或果汁。也可以試試葡萄汁、柳橙汁、百香果汁等,做出不同風味與顏色的珍珠。

How to Make the Pearls
做法

1. Bring the Liquid to a Boil
將液體煮滾

Bring your water, brown sugar water, or fruit juice to a full boil.

將水、黑糖水或果汁加熱至完全沸騰。

2. Pour the Boiling Liquid into the Tapioca Starch
將滾燙液體倒入樹薯粉

Pour the boiling hot liquid directly into the tapioca starch.

將滾燙的液體直接倒入樹薯粉中。

Wait for 5 seconds — don't stir yet!
先等待 5 秒鐘,不要馬上攪拌!

After 5 seconds, quickly mix the tapioca starch and hot liquid together until they start to form a dough.

5 秒後,再快速將樹薯粉與液體攪拌均勻,直到開始形成麵團。

Tip: The liquid needs to be very hot. This helps the tapioca starch come together and is important for creating a chewy texture.

小提醒:液體一定要夠燙,這能幫助樹薯粉成團,也是做出 Q 彈珍珠的重要關鍵。

3. Knead the Dough
揉成麵團

When the dough is cool enough to touch, knead it with your hands until smooth.

等溫度降低到可以用手碰之後,把麵團揉到表面光滑。

If the dough feels too dry, add a tiny amount of liquid. If it is too sticky, add a little more tapioca starch.

如果太乾,可以加一點點液體;如果太黏,可以再補少量樹薯粉。

4. Shape the Pearls
搓珍珠

Roll the dough into thin strips and cut it into small pieces. Roll each piece between your palms to make small round pearls.

將麵團搓成細長條,再切成小塊,接著用手將每一小塊搓成圓形珍珠。

Sprinkle a little tapioca starch over the pearls so they do not stick together.

最後撒上一點樹薯粉,避免珍珠互相黏在一起。

5. Cook the Pearls
煮珍珠

Bring a pot of water to a boil and add the pearls. Cook until the pearls float to the surface and become chewy.

煮一鍋滾水,再放入珍珠。煮到珍珠浮起,口感變得有彈性即可。

After cooking, place them in cold water for a short time.

煮好後可以放入冷水中稍微降溫。

Brown Sugar Tapioca Pearls
黑糖珍珠

For a classic Taiwanese bubble tea flavor, mix the cooked pearls with brown sugar or brown sugar syrup. Let them sit in the syrup for a few minutes to absorb the sweetness.

如果想做經典台灣珍珠奶茶的味道,可以把煮好的珍珠拌入黑糖或黑糖糖漿,再浸泡幾分鐘,讓珍珠吸收黑糖的香氣與甜味。

Fruit-Flavored Tapioca Pearls
水果珍珠

You can replace the water with fruit juice. The juice gives the pearls a natural color and a light fruity flavor.

你也可以直接把水換成果汁,讓珍珠帶有自然的顏色和淡淡的水果香氣。試試不同的果汁,做出屬於自己的珍珠奶茶吧!

Homemade tapioca pearls are best enjoyed fresh, so make only the amount you plan to eat.

自製珍珠最好現做現吃,因此建議依照人數準備需要的份量。
